After completing my Dissertation last Easter the stress of balancing deadlines and part-time work had worn me down and being able to escape to Paris with my best friend for a few days felt like stepping straight into a movie. Between the aesthetic cafes, dreamy architecture, and getting lost in the little side streets, this trip was exactly what I needed to reset and romanticise life again. My go-to healthy snack: Muesli with fruit and yogurt. A simple snack for a busy routine

Between early morning lectures, a 9-5 shift, and trying to keep up a social life, finding time to eat healthy can feel like a challenge. But one thing which has been a total game changer for me has been making fruit and muesli bowl with coconut yogurt and a drizzle of honey. It is quick and easy to make, nutritious, and best of all delicious.

This isn't just any basic breakfast; it is my own little morning ritual which keeps me feeling energised and balanced throughout the day. So, if you're looking for an easy, healthy option that fits into a busy schedule, keep reading- I'm sharing my favourite recipe and how it helps me stay on track with my diet.

Why I love it: This meal has the perfect balance of health and enjoyment

Preparing a meal can often feel like a daunting task, and procrastination can be our own worst enemy leading us to make an unhealthy or a convenient food choice. But for me, food is not just about fuelling my body, it is about enjoying the process. What I love about this snack is that it is:

💨 Quick and easy, it is perfect for busy mornings or as a post work snack.

🥗 It's nutritious, packed with fibre, vitamins, healthy fats, and protein.

🌈 It is customisable. You can switch up the fruits, yogurt and toppings based on what you're feeling each day.

✅ Most importantly, it is satisfying. It keeps me feeling full and refreshed, which is great when I have busy day ahead. 

Plus, there is just something satisfying about eating a meal you have spent time and effort into making. It is also a great reminder that healthy eating doesn't have to be complicated or boring. In fact, the more colourful and vibrant my food is, the more I enjoy it, which has been helpful in making me stick to a healthy diet. 

Did you know, that preparing your own meals can help you to look and feel healthier, it boosts your energy, can help with stabilising your weight and mood, and can also improve your sleep and resilience to stress.  

What you will need: 

Here is my basic recipe, but feel free to adjust it to your own taste.
  • A 1/2 cup of muesli or granola 
  • 1 banana sliced 🍌
  • 4 strawberries 🍓
  • 10 blueberries 🫐
  • 1 apple 🍎
  • A 1/2 cup of all natural coconut yogurt 🥥 (or any greek/plant-based yogurt)
  • Optional- a tablespoon of chia seeds for extra fibre
  • A drizzle of honey 🍯 (if you like it sweet)
  • Toppings of your choice- nuts, cinnamon, coconut flakes, etc
How to make it:

  1. Start with the base. Add the half cup of muesli into your bowl. If you prefer it softer, feel free to pour some plant-based or regular milk over it and leave it to sit for a minute or two.
  2. Add the yogurt. Spoon the yogurt over the muesli. I usually use three heaped tablespoons.
  3. Pile on the fruit. After slicing your banana, cutting up your apples and berries, place them in the bowl. Have fun with it, use whatever fruit you enjoy, makes it more fun to eat!
  4. Add your desire toppings. Add your chia seeds, nuts, and a light drizzle of honey.
  5. Mix and enjoy. Grab a spoon, give it a little mix if you like, and dig in!
